When asked what kind of honey we have, our answer is simple: who knows, honey.<\/em><\/p>\n

Our bees are kept in an organic, regenerative system where intervention is intentionally minimal\u2014supplemental feeding only when absolutely necessary to preserve the life of the colony. In this way, the honey is never directed, only discovered.<\/p>\n

Located in Fentress County, Tennessee, our apiaries sit within a vast, largely untamed landscape of forest, woodland, and grazing fields, with very little cultivated or landscaped forage. As a result, we do not control or define what the bees gather\u2014we simply steward the conditions that allow them to thrive.<\/p>\n

Throughout spring and summer, they may be found working the blooms of diverse flowering trees across the region. In autumn, they gather in remarkable abundance on goldenrod, a seasonal signature of the landscape.<\/p>\n

The result is honey that cannot be standardized, only revealed\u2014an expression of place, season, and the quiet intelligence of the hive.<\/p>\n
